The house standard.

Rooms, not units.

Every house keeps its own name, its own menu, its own regulars. The group exists so each room can be more itself — never less.

Atmosphere is operations.

Lighting, pacing, music, the temperature of a welcome — the things guests feel but never see on an invoice. We manage them nightly, on purpose.

Consistency you can taste.

A great night should not depend on luck. Standards travel from kitchen to kitchen so the third visit is as good as the first.

Stewardship over ownership.

These rooms belong to their neighborhoods as much as to us. We keep them lit, staffed, and honest — and hand them forward better than we found them.
